Now I can't remember what it was in the book. I spelled it (backwards from Kirk) following the clues. Very clever riddle, Puck.
Okay, here's mine. And no one need worry: I'm not going to give up my day job to become a poet
At the apex few are known (though others might have been around).
Two can be found in the roots of the ground.
Two more are shown: One unnamed, one renowned.
And once the present has flown, one more will likely be crowned.
Who are they?

The correct answer is indeed the Headmistresses of Hogwarts.
I'll break the riddle down:
At the apex few are known-- the "apex" being the headmaster position, and only four female ones have been mentioned that I know about-- (though others might have been around). --Hogwarts has been around a thousand years, and we in no way have a complete list of all former Heads, so there may well be more we don't know about.
Two can be found in the roots of the ground.-- The "roots" being the founding of Hogwarts, and the "ground" being the grounds of Hogwarts. There were four founders, but we only need two for this riddle: Helga Hufflepuff and Rowena Ravenclaw.
Two more are shown:-- Of the portraits described in the Headmasters office, two are of former Headmistresses-- One unnamed,-- that's the gimlet eyed witch-- one renowned. --The renowned one is Dilys Derwent.
And once the present has flown, one more will likely be crowned.-- McGonagall is deputy Headmistress, and now that Dumbledore is gone, she will likely be confirmed Headmistress in the near future.
Who are they? --The Headmistresses of Hogwarts.

Okay riddle time, I don't think this one is very hard
To change the sight from one to many,
Used in good or deeds of villainy.
Take wee little critters, winged and scary,
Boil and steam them, seven times three.
Then add the slimy creep with an affinity for blood,
and the crushed dual horned whom eats flesh for food.
Follow grass that is tied,
and weed found when the werewolves stride.
Hide of the Tree snake,
And an icky little flake.
Add it all,
Let it boil,
And see the hour unroll.

Yey, go Finn! It is indeed a Manticore.
My reasoning -
From the place of the Acropolis I come, ...the Acropolis is found in Greece, and the Manticore is a Greek monster.
Fear of me will make you go numb! ...the annoying niggling line I don't like. I did originally have 'To approach me you must be pretty dumb!' The Manticore is scary!
For instant death I bring, ...when the manticore stings you, you die instantly.
And when devouring you I softly sing. ...it croons when eating you.
Three parts to me you will find,
Two of creature, one of mankind. ...the head of a man, body of a lion, tail of a scorpion.
So what am I, don't dawdle about,
For I can repel most of what you spell out!. ..it's skin repels most known charms!

Reasoning...
I could be relied on until Voldemort came back, In OoP the DP publishes falsehoods about Harry and Dumbledore and the Return of Voldemort.
Then all of a sudden, I lost my once-known knack. It used to be reliable, but, then it lost its credibility.
Now Harry Potter and I are on different terms, Again, obvious. Doesn't believe Harry.
As Rita Skeeter so easily confirms. Rita writes for the paper and she publishes lies about Harry.
Who or what am I? Important because all of you thought it was a who!

Esther Rose has the riddle, the answer is the shack on the rock out to sea!
I am a place of revelations. Much is revealed there by Hagrid. Harry learns what is in the letter, that there is a magic school called Hogwarts, that he is a wizard, that his parents were magical, that they were actually murdered by Lord Voldemort, etc., etc.
Four in the afternoon, in cold and iron. Four people go out to the rock in late afternoon. The setting is described as cold and iron-grey.
Five after midnight, when fire is brought to join the air, water, and earth in the night. Hagrid shows up at midnight, so thereafter there are five people on the island. Vernon hadn't been able to light a fire earlier, but shortly after he comes Hagrid lights a fire (fire), storm and wind surround them (air), they are out to sea (water), and in the shack on the rock (earth).
Three in the morning, and all calm and bright. Hagrid and Harry leave the three Dursleys behind on the island in the morning. The storm is over, and the sun is out.

Yay, Lina! You are correct, it is "Wingardium Leviosa"!
Here is the explanation:
First, but not least - first charm we see students learn
Mightier than beast - it was used to defeat the troll
Binds together - the defeat of said troll united our trio
After pushing apart - Hermione's attitude during the class where they learned the spell,and Ron's comments after caused a huge rift between them.
Enchanting in flight - enchant=charm, which makes things "fly"
From the very start - from SS/PS
Funny, because after I wrote it I kept thing of the 1st Task of the Triwizard Tournament (1st task, defeating a dragon, Harry & Ron's fight), so I was surprised no one guessed that.

Yes, diamonds are the answer.
I apologize to everyone, but the one way I can spot my coveted HP books (even from the other side of the room) are from the diamonds that are on them. They are on the spine of the Paperbacks and on the cardboard of the hard covers. Also, all over the title pages. Going through the riddle.
Though I am within each book.
I maybe often over looked.
Title pages are often overlooked. And the diamonds on the spine can sometimes be missed.
I keep my shape, but do change colors,

The key word here is shape. Also, diamond patterns on the title pages are gray and white.
And each diamond is a different color from its adjacent diamonds.

The answer is The Fountain of Magical Brethren.
Under the ground is where I lie. In brightness that could make you cry.
The Ministry of Magic is found under ground. On the way down Harry had to close his eyes to avoid them from watering
Though you may approach me wary. It's hopes and dreams that I carry.
When Harry first sees the fountain he is worried about being expelled from Hogwarts. In doing so he makes a "wish" to not be expelled from Hogwarts. (for an exchange of 10 Galleons)
I am a symbol of great unity. So think of others as you're passing me.
The fountain had statues of a wizard, a witch, a goblin, a house elf, and a centuar and the proceeds of what was thrown into the fountain benefitted St. Mungo's Hospital for Magical Maladies and Injuries

Marè, you have it. A first year student at Hogwarts, waiting to be sorted.
I must admit that I spent too much time on the structure of the clues and not enough on the content. I had intended it to be about the Sorting Hat. However, as I see now, I wrote it from the student's point of view (except the last verse).
So, Marè, you are more correct than my own intent. I thank you for sparing me a lengthy trial.

Azi got the riddle! I need to make harder ones... very good!
I light the days, I light the night, Hinkypunks have lantarns.
But from my shadows you can't hide. This is a very bad reference to their smoky substance. I figured smoke>grey>shadowy and vapoury... And it had to rhyme too.
Follow me, follow me when I call. They don't actually call but they lure you which is close enough.
Darkness then will fall. Into the bogs we go, and I don't think that will be very healthy.

The use of "louse self" was simply to get it to rhyme with "house-elf," but if you take out the word louse that's really what you're looking for. Still, we don't know if the witch was ever a contemptible person.) Sorry! Told you it was bad!

HungarianHorntail11 has guessed the riddle with the Death Eater whose head fell into the Bell Jar (or The Baby-Headed Death Eater, as I like to call him)!
Here is the riddle explained:
Once upon a time (my little joke because it's in the Time Room and it's about Time) I was evil and feared, (because he's a Death Eater!)
Only to be stunned at what happened when I visited that bird! (when Hermione Stuns him he falls, and his head falls into the bell jar "home" of the hummingbird that keeps cycling between egg and bird. Everyone is amazed to see the Death Eater's head shrink to baby size, grow large again, then back to baby....")
Now though I think only innocent thoughts, (because he's got a baby head with a baby brain, so "innocent thoughts")
But I can't be denying that I'm looking quite weird. (because now he's got a little baby pinhead on top of a big old Death Eater body. Might even be weirder looking than the water skiing budgie, or at least a close second!)

I bet you guess a load of hogwash! This was a weak link to Phinea's feeling that young people are annoying, talk rubbish etc. I found the insults he used to be...unusual...and tosh and hogwash are also unusual insults. Hogwash could also be seen as a link to Hogwarts.

Exactly Mills! Congratulations!!!
The riddle was about what the "Quintessence: A Quest" book is telling to Harry:
"Hear my humming voice" was a reference to Dumbledore because (as often said on the alchemy thread) he, and music/harmony, are connected to the quintessence symbol and it was also a clue that the next line was to be "hummed", that is to say was coming from a song. (And I wouldn't be surprised if DD was the author of that book BTW)
"And follow that star..." was to make you think of "quest": this is Harry's quest (and there was also a nod towards the alchemists' "star" here which guides them).
Then were clues about the meaning of that quintessence quest for Harry:
"Don't trust one, But all."
Harry has to trust not only the Gryffindor house but the four houses, Slytherin house included, so that Hogwarts will be united again.
[i]"Don't let go one, You'd fall."
Same meaning: the balance of the 4 elements/4 houses (not one has to be let out) will bring the "quintessence", the fifth element.
"But be them and above And they'll answer your call."
Quintessence means to be at the same time inside each element and above them: Harry has to reach that stage (symbolically) so to have the whole school with him in his last battle against Voldemort.
And I said the last answers you suggested were part of the answer's meaning because that unity of the houses is what the Sorting hat keeps telling them about in the last books and I really see the house ghosts playing a part in that "quest" too!

Lily had a flair for Potions. When Harry used peppermint in "An Elixir to Induce Euphoria," this was an unusual enough ingredient to remind Slughorn of Lily.

Lily's wand was supposed to be good for charms. She also had a lot of friends; when Harry sees her in Snape's Worst Memory, she is surrounded by girlfriends.

As you all figured out John was correct on the riddle. I see that John hadn't posted a riddle yet so I will put the explaination here for those who did not look in my profile.
The answer is Dobby. He is a House Elf but the riddle is specific to him.
One, two,
I’ll follow you.
We are introduced to Dobby in COS (book 2). It is there Dobby makes it a task to follow Harry around to try and keep him away from what is about to happen at Hogwarts.
Three four,
I’ve done your chore.
In GOF (book 4) it is Dobby that figures out how to get Harry to stay underwater for an hour. And it is Dobby that retrieves the Gillyweed and wakes Harry up in time for the second task.
Five, six,
Just as you wish.
Until I can't do it any more.
In Book six, Dobby declares complete loyalty to Harry and literally watches Draco around the clock.

Winky, you found the right answer, even if you did scramble the word order. It is Snidget Egg (or Egg/Golden Snidget). Edit: of course egg of Snidget would be a correct word order (if not the proper translation) in Latin based languages (and others, perhaps).

fried was a clue to as well as an eggcuse as to why it took so long for me to post a new riddle.

Part 1 is an Egg.

Snidget became an endangered species.
Now for the game they use something new.
The Snitch was invented to replace the Snidget.
Part 2 is a Snidget (or Golden Snidget).
I poached part one to hide part two,
'cause I didn't know what else to do.
Well, I suppose this could have been better phrased, but part two was hidden inside part one. (See second line of part 1.)
Answer: Snidget egg (or Egg/Snidget).
I really thought Elanor would recognize the egg riddle, as I know she has read Tolkien.
The hints I gave in italics were fried, then later added riddle... in the dark, and changed stole to poached.
