to run into any Dementors
Can Dementors fly? I think they float above the ground, but I can't remember any mention of a flying Dementor in the books. At least I would think even if they can fly they would never go too high up in the air - they would be too far away from the people whose emotions they use. So if Buckbeak can fly high enough, it would be relatively easy to avoid Dementors. Of course, there might be some flying wizard patrols as well - but then again, luckily, no one knows that Sirius and Buckbeak have escaped together, although Buckbeak is probably on the 'wanted' list, too.

It is another question how far away the Dementors can sense their target or how far away their negative influence (which made Harry fall) extends. Hopefully, Buckbeak can fly higher than Quidditch players usually do.
